Camp Skillet Frittata

The best way to start the day? Seth’s famous skillet frittata – a fast, easy camping breakfast that’s packed with meat, veggies, and plenty of protein, which equals more energy for all your outdoor adventures. And since one skillet serves everyone in your group, it’s one of the simplest morning meals you can make. Let’s cook!

Ingredients

6 eggs, beaten

½ cup chopped onion

½ cup chopped peppers

1 cup diced potatoes

½ cup chopped bacon, sausage, or ground beef (optional)

½ cup shredded or cubed cheddar cheese

Salt and pepper to taste

Instructions

1. At home, crack six eggs into a mason jar and seal tightly.

2. When you’re ready to start cooking, add your choice of meat to a cast-iron skillet and brown over medium heat (optional).

3. Add the vegetables and cook until potatoes are fork tender.

4. Reduce heat to low. Add eggs and shredded cheese, and mix together being sure to combine, not scramble. Salt and pepper to taste.

5. Cover with foil and cool for about 15 minutes, or until the eggs are set in the center of the skillet.

6. Serve with salsa, sour cream, and hot sauce.

Get cracking before you go

Packing eggs for camping can be a risky proposition. Crack them into a mason jar before you leave home and you'll never worry about them breaking in transit.

Create a pocket-sized spice rack

Instead of wasting valuable packing space with individual jars of spices, separate them out into the compartments of a pill organizer instead.

Make use of those leftovers

Substitution is key when it comes to camp cooking. Have leftover veggies or other ingredients from another meal? Clean out your cooler and use them in the next recipe.
