Camp Skillet Frittata

Cook Time Approx. 20 Min | Serves 4-5

The best way to start the day? Seth’s famous skillet frittata – a fast, easy camping breakfast that’s packed with meat, veggies, and plenty of protein, which equals more energy for all your outdoor adventures. And since one skillet serves everyone in your group, it’s one of the simplest morning meals you can make. Let’s cook!

Ingredients

6 eggs, beaten

½ cup chopped onion

½ cup chopped peppers

1 cup diced potatoes

½ cup chopped bacon, sausage, or ground beef (optional)

½ cup shredded or cubed cheddar cheese

Salt and pepper to taste

Instructions

1. At home, crack six eggs into a mason jar and seal tightly.

2. When you’re ready to start cooking, add your choice of meat to a cast-iron skillet and brown over medium heat (optional).

3. Add the vegetables and cook until potatoes are fork tender.

4. Reduce heat to low. Add eggs and shredded cheese, and mix together being sure to combine, not scramble. Salt and pepper to taste.

5. Cover with foil and cook for about 15 minutes, or until the eggs are set in the center of the skillet.

6. Serve with salsa, sour cream, and hot sauce.

CAMP VEGGIE CURRY

Cook Time Approx. 15 Min | Serves 4

In the mood for something fresh, nourishing, and a bit different? Seth’s one-pot veggie curry is always a crowd-pleaser, full of bright, beautiful flavors and fragrant Indian-spiced vibes. Featuring an ingredient list that lets you use up leftover veggies from other meals, it’s a quick camping lunch that gets you on your way and leaves no trace. Let’s cook!

Ingredients

2 Tbsp. curry powder or garam masala

½ cup water

2-3 Tbsp. cooking oil

3 cloves garlic, chopped

1 medium onion, chopped

2-3 cups vegetables, chopped (carrots, cauliflower, broccoli, green beans, or whatever else you have on hand)

1 cup sour cream or plain yogurt

Salt and pepper to taste

Instructions

1. In a pot, add oil over medium heat.

2. Mix curry powder and water in a mason jar or small container, then add to pot and stir.

3. Once the liquid is heated through, add the veggies and sauté until they’re about “half cooked.”

4. Add sour cream or yogurt and stir until curry thickens. Salt and pepper to taste.

5. Simmer until vegetables are cooked all the way through.

6. Serve a hearty portion over rice.

TWO-CAN CAMP CHILI

Cook Time Approx. 25 Min | Serves 4

There’s nothing better than a little comfort food around the campfire. Seth’s simple chili recipe is a one-pot wonder that warms you from the inside out – a hearty, filling camping dinner classic that requires you to operate a can opener and not much else. Served piping hot with a big hunk of pre-made cornbread on the side, it’s the perfect camping dinner for winding down after a long day spent playing outside.

Ingredients

1 lb. ground beef or meatless substitute

1 bell pepper, diced

1 onion, diced

Lots of chopped garlic

12 oz. can black or kidney beans, drained

12 oz. can diced tomatoes

1 Tbsp. chili powder

1 Tbsp. ground cumin

Salt and pepper to taste

Instructions

1. In a skillet, add olive oil over medium heat.

2. Once the oil is shimmering, brown ground beef or your favorite meatless substitute.

3. Add meat, bell pepper, onion, and garlic to a large pot. Stir everything together.

4. Add one can beans, drained, and one can of diced tomatoes with all their juices.

5. Add chili powder and ground cumin. Salt and pepper to taste.

6. Cover and cook until chili thickens, about 20 minutes.

7. Serve immediately, with a dollop of sour cream, and premade cornbread on the side.

BLUEBERRY COBBLER

Cook Time Approx. 20 Min | Serves 4

There’s nothing sweeter than ending a meal with Seth’s blueberry cobbler recipe. This crowd-favorite unleashes a burst of flavor in every bite thanks to pleasantly tart blueberries topped with a crisp, subtly sweet oat crumble. It’s one of those camping recipes that gives gourmet, but is actually super easy to make – especially since the prep for its wonderful crumble topping starts at home. Let’s cook!

Ingredients

½ cup old-fashioned oats

6 Tbsp. flour

3 Tbsp. packed brown sugar

¼ cup granulated sugar

¼ tsp. cinnamon

3 Tbsp. butter

1-½ cups blueberries

Instructions

1. At home, combine oats, brown sugar, granulated sugar, flour, and cinnamon in a resealable bag.

2. When you’re ready to start cooking, add butter to dry ingredients and work it in with your fingers until it forms a crumble.

3. In a cast-iron skillet, add blueberries over medium heat.

4. Sprinkle oat crumble over the top of the blueberries.

5. Tent foil on skillet and “bake” for about 20 minutes.

6. Serve hot with vanilla ice cream or whipped cream.

TIPS & TRICKS - From our camp cooking expert

Get cracking before you go

Packing eggs for camping can be a risky proposition. Crack them into a mason jar before you leave home and you'll never worry about them breaking in transit.

Create a pocket-sized spice rack

Instead of wasting valuable packing space with individual jars of spices, separate them out into the compartments of a pill organizer instead.

Make use of those leftovers

Substitution is key when it comes to camp cooking. Have leftover veggies or other ingredients from another meal? Clean out your cooler and use them in the next recipe.

Mix dry ingredients before you leave

Instead of making a mess trying to measure and mix dry ingredients at the campsite, simply do it at home and have it ready to go in a resealable bag.

Not everything has to be homemade

While your main dish should be fresh off the fire, don’t be afraid to use premade or store-bought sides like a cornbread or boil-in-a-bag rice.
